This burger recipe has real Greek flavors using feta cheese and roasted garlic and served on warm pita bread. Makes 4 small Greek Feta Burgers.
Ingredients:
- 4 large unpeeled garlic cloves
- 1 1/4 lb minced lamb
- 1 cup crumbled feta cheese
- 1 tsp dried oregano
- salt to taste
- black pepper to taste
- 1/2 large cucumber, peeled, grated and squeezed very dry in a clean towel
- 1/2 lb sour cream
- 2 tbs minced fresh mint leaves
- 1 tsp red or rice wine vinegar
- 1 clove garlic, minced
- 1 large tomato, thinly sliced
- 1 red onion, thinly sliced
- 4 small (4 inch) pita breads
Method:
- Begin by roasting the 4 whole garlic cloves until browned. This can be done in a hot oven for 20-25 minutes or 10-15minutes in a skillet. Peel, mince and set aside.
- Break up the lamb in a medium bowl. Sprinkle roasted garlic, feta, oregano, salt and pepper over meat and stir with a fork to combine well. Divide into 4 portions and flatten to about 4 inches wide. Refrigerate until required.
- To make the Greek topping mix the cucumber, sour cream, mint, vinegar, 1 minced clove of garlic, and salt and pepper to taste in a small bowl. Refrigerate sauce until ready to serve.
- Fry the burgers in a little oil for 5-7 minutes each side and grill the pita breads for a minute or so per side. Split crosswise. Spread a couple of tablespoons of sauce over 4 pita halves. Top each with an onion slice, a tomato slice and a burger. Spread a portion of the remaining sauce over each burger. Top with remaining pita halves.
